Citric Acid is useful in sprouting, canning, drying or freezing and can be used to preserve Vitamin C content, stop spoilage by bacterial growth, and prevent discoloration. It is a food grade acid that is present in many natural foods. It can be used to reduce spoilage in sprouting by adding 1 tsp. per quart to soak and rinse water.
Powdered citric acid can be added to dry foods when you want a sour flavor. Citric acid is a dry alternative to lemon juice or vinegar in dry foods. Can be added to a seasoning salt. Citric acid’s acidic pH makes it useful as a preservative. Citric acid is added to jams, jellies, candy, canned foods and meat products as a preservative.
Use 1 tsp. per quart of water or juice for most fruits and vegetables.
